Mutton Piyyaza
Ingredients:
A:
- Mutton 2 kg
- Cumin 1 tsp
- Cinnamon 2 sticks
- Black cardamom 2 pcs
- Whole Black pepper 5-10 pcs
- Cloves 4 to 5
B:
- Ginger garlic paste 3tbsp
- Oil ½ cup
- Onions 3-4 (finely sliced)
- Tomatoes 2 pcs (chopped)
- Nestlé MILKPAK Yogurt ½ kg pack
- Salt 1 teaspoon
- Red crushed pepper 1 teaspoon
- Turmeric ¼ teaspoon
- Black pepper powder 1 teaspoon
- Green chilies 5 to 6 (slit into two)
- Fresh Coriander leaves ¼ cup
Cooking Directions:
- Tender meat with listed spices from part A in a pressure cooker for 20 mins.
- Once cooked dries up its water on high flame saving only1 cup of water for later use.
- Add oil in a cooking pot and fry ginger garlic paste till light brown.
- Add tender meat pieces and cumin to golden ginger garlic paste and fry meat nicely till meat changes color to light golden.
- Add sliced onions into this mixture and fry until light golden in color.
- Add chopped tomatoes and 1 cup remaining mutton stock and cook for 3-5 mins on high flame till water dries up.
- Add 2 cups of Nestlé MILKPAK yogurt with spices and cook meat with covered lid for8-10 mins.
- Once gravy start leaving oil on sides, garnish with chopped green chilies and fresh coriander leaves.
- Serve with Naan and zeera raita.
