Mutton Piyyaza

Ingredients:

A:

  • Mutton  2 kg 
  • Cumin 1 tsp 
  • Cinnamon 2 sticks 
  • Black cardamom 2 pcs
  • Whole Black pepper 5-10 pcs 
  • Cloves 4 to 5 

B:

  • Ginger garlic paste 3tbsp 
  • Oil ½ cup
  • Onions 3-4 (finely sliced) 
  • Tomatoes 2 pcs (chopped) 
  • Nestlé MILKPAK Yogurt ½ kg pack
  • Salt 1 teaspoon
  • Red crushed pepper 1 teaspoon
  • Turmeric ¼ teaspoon
  • Black pepper powder 1 teaspoon
  • Green chilies 5 to 6 (slit into two) 
  • Fresh Coriander leaves ¼ cup 

Cooking Directions:

  • Tender meat with listed spices from part A in a pressure cooker for 20 mins. 
  • Once cooked dries up its water on high flame saving only1 cup of water for later use.
  • Add oil in a cooking pot and fry ginger garlic paste till light brown. 
  • Add tender meat pieces and cumin to golden ginger garlic paste and fry meat nicely till meat changes color to light golden.
  • Add sliced onions into this mixture and fry until light golden in color.
  • Add chopped tomatoes and 1 cup remaining mutton stock and  cook for 3-5 mins on high flame till water dries up.
  • Add 2 cups of Nestlé MILKPAK yogurt with spices and cook meat with covered lid for8-10 mins.
  • Once gravy start leaving oil on sides, garnish with chopped green chilies and fresh coriander leaves.
  • Serve with Naan and zeera raita.
